Sula Indian Restaurant’s Meatless Monday Recipe: Bhaigan Bharta

Another Meatless Monday is upon us. At Sula, our kitchen gets going early endless amounts of vegetables are cut, we caramelize what seems like a ton of onions (caramelized onions are key to all curries) and prep the spices that make the chai perfect. The prep that goes into curries like Bhaigan Bharta is no different. But the end result is completely worth it. As part of our Meatless Monday series, we’d like to share with you a recipe for Bhaigan Bharta, a simple and wonderful eggplant curry.

INGREDIENTS:

  • 1 large eggplant, or 2 medium
  • 4 large tomatoes
  • 3 cooking onions chopped
  • 2 – 3 green chilies, chopped
  • 1 – 2 inch piece of ginger
  • 1 ½ tbsp. coriander leaves, chopped
  • 1 tsp. cumin
  • 2 tsp. red chili powder
  • pinch of salt

Bhaigan Bharta

METHOD:

  1. wash, pat dry, and prick eggplants
  2. roast in an oven at 350 until soft, 40 – 45 mins
  3. let them cool
  4. remove skin and mash pulp completely
  5. add cumin seeds, cook for a few seconds
  6. add onions and sauté until translucent
  7. add ginger and green chilies, cook for a minute
  8. add red chili powder, cook for 5 mins
  9. add salt, just a dash
  10. add tomatoes, cook for another min
  11. garnish with chopped coriander
  12. enjoy!
